After a few months away, the fan-favorite, delicious, gluten free Marco's Coal-Fired Eggplant Rollatini has RETURNED to our menu!

Never tried it? Now is the TIME! In addition to eggplant being in-season (maximum yum) this dish is so addictive! Slices of tender eggplant pan fried crispy, rolled up with milky ricotta, and topped with melted mozzarella and San Marzano tomato sauce. Our coal-ovens are the not-so-secret ingredient - you can't get this special flavor anywhere else!

STEP 1: THE DOUGH MAKES THE DIFFERENCE

Like all of our products, we use only the best available.

Made by Mulino Caputo in Naples, Italy Fioreglut is the best Gluten Free Flour on the market because it uses deglutinized wheat starch ( Continuously tested under 5PPM of Gluten, 4x under the FDA limits for Gluten Free Certification) and a blend of cereals to make a flour that can be mixed, fermented, stretched and cooked just like a traditional Neapolitan Pizza Dough.


What are all the ingredients in our Gluten Free Dough?

Mulino Caputo Fioreglut flour, Water, Salt, Yeast. That's it! Each batch of our dough is mixed by hand in dedicated equipment, then allowed to ferment over 24 hours for outstanding flavor and dough structure!

The result is a yeasty, flavorful, soft and chewy crust in keeping with authentic Italian tradition and safe for Gluten Free guests.

STEP 2: KEEP 'EM SEPARATED

A even a great gluten-free crust can be ruined if it comes into contact with traditional flour. We have protocols at every step of prep and production to keep our Gluten Free pizza free from contamination.

  1. We never use shared equipment, like bowls, dough mixers, proofing trays or pizza cutters.

  2. We never use the same toppings for Gluten Free pizza.

  3. We never stretch Gluten Free pizza in the same area. Different pizzaiolos are assigned to GF and traditional pizza each shift.

  4. We never bake Gluten Free pizza in the same oven as traditional.

While there is never a way to prevent 100% of glutinous flour particles from coming into contact, you can be sure we take preventing cross-contamination SERIOUSLY.

In the almost 15 years since we opened, our Gluten Free following has grown tremendously and demand for great gluten free options keeps on rising! We attribute this to our consistently great product, great procedure and great training for FOH staff.

Eggplant Rollatini! This deeply savory and delicious eggplant dish is always GF friendly - we use Fioreglut rather than breadcrumbs to coat our eggplant.

Although the family’s philosophy keeps preserving the original values found by Antimo Caputo Senior…the Caputo Family has looked in deep and forward to give it’s contribution to an important matter about food intolerances. Celiac disease is nowadays a worldwide phenomenon affecting kids and adults.

Fioreglut is the product of a peculiar food research and food technology applied to the unmistakable values of Caputo. It’s in compliance with the most restrictive regulation for free gluten products (< 5 ppm of gluten proteins residues) and also certified ISO 22000:FSSC and Kosher.

Marco’s Coal-Fired - the Ballpark Neighborhood favorite for over 10 years, and its Englewood location in the Vallagio at Inverness - are bringing fans an exciting new suite of Menus with an expanded line up of new favorites to match the Award-Winning VPN (Verace Pizza Napoletana) Neapolitan Pizza they are known for.

Highlights from the Menu include new Starters like the spicy Calabrian Chicken Wings, Salumi and Formaggio plates designed for sharing and showcasing the carefully selected Italian imported ingredients Owner, Mark Dym is so passionate about.
